- Distilled one time in a 750L alambique
- Using only the heart of the distillate ‘coração’
- Average abv off the still is 48%
- Diluted with di-ionised water from a 50m local well which is the meeting point of 7 surrounding valleys
- The cachaca is rested for 10 month with inox barrels
- Then blended in 5/6 year old aged in European Oak cachaça (depending how much the liquid has reacted with the barrel) for Yaguara’s unique taste
- Filtered three times for absolute purity
Sustainability
- All electrics in the distillery are solar powered
- The excess bagasse is re-used to power the furnaces
- We use gravity for the liquid journey rather than pumping it around
- The excess ‘head and tail’ are re-distilled for bio fuel
